Gladiator armor passes Knight's by a long shot, but if you like the look go ahead and keep it. If you're looking for effectiveness, go for Platemail for extra armor against elemental attacks, or Gladiator armor for extra energy and physical armor.
I'll summarize what the others said, since I don't think there's a single post anywhere that focuses on this.
As far as Knight's and Ascalon armor work now (apparently they haven't changed anything with the SF update), they both have damage reduction of -2. This reduction is universal; that is, you only need to wear one piece for it to work. Wearing more than one piece of Knight's or Ascalon armor gives no additional benefit; Knight's and Ascalon armor do not stack with themselves or with each other, the only differences between them being cosmetic. No matter how many pieces of Knight's and Ascalon armor you wear, you will always get the same benefit as one piece; that is, -2 damage reduction.
Damage reduction is one of two armor bonuses that are universal. Armor versus specific damage types, such as physical, fire, light, etc. are not universal. Those apply only to the specific armor piece. Stat bonuses such as additional energy and attribute level bonuses are technically universal since it wouldn't make much sense for them to apply to a single piece. The only other universal armor effect is the +15 while casting on Mesmer armor, which really doesn't matter to a Warrior.
Runes of absorption do stack with Knight's and Ascalon armor; if you wear a Rune of Major Absorption (-2 universal damage reduction), it will stack with the Knight's or Ascalon armor to provide -4 damage. It also stacks with shield damage reduction, provided the attack comes from the front.
However, Runes of Absorption, just like any type of Rune, will not stack with each other. Only the best Rune will take effect; if you wear a Minor Rune and a Major Rune of Absorption, you'll only get the -2 from the Major and not the -1 from the Minor. The Superior Absorption Rune gives -3.
